Back when low-carb diets were all the rage, I gave the Atkins Diet a try. I found it hard though because there just weren’t many ‘Atkins approved’ products in the market that made the diet ‘user friendly’. Needless to say the diet was very rigid and hard for me to follow so I sort of dropped it as quick as I started it.

A few years later I tried the South Beach Diet and had great success. And believe it or not both the Atkins diet and the South Beach are very similar with a few minor changes. Since I dabbled with both diets, I’ve managed to maintain a low-carb lifestyle and was more than thrilled when I was offered a chance to sample some new Atkins products in their ‘cuisine line’.

Atkins has recently launched two new staples, the new All Purpose Baking Mix and Penne Pasta. They are packed with fiber, are low in sugar, and of course fit perfectly into a low-carb lifestyle like mine! Plus, they make cooking and baking easy! I tried both of these products and I loved them. My family did too! On a Saturday morning I made pancakes for everyone using the All Purpose Baking Mix by following the easy recipe on the back of the packaging. And to think there are on 3 net carbs per pancake! They were delicious and completely worth it. And with the Penne Pasta I made the Penne and Vegetable Medley (again found on the box) one night to complement our dinner and again, it was delightful and enjoyed by all.
